breakfast sausage & egg bake
3 SERVINGS OF 2

4               OUNCES TURKEY SAUSAGE OR TURKEY BACON OR COMBO
1/2          GREEN BELL PEPPER     
1/4          ONION, CHOPPED
5               LARGE EGGS (WHOLE OR HALF EGG, HALF EGG BEATER)
6               OUNCES FRESH SLICED MUSHROOMS
1/2           CUP SHREDDED REDUCED FAT CHEDDAR CHEESE

  Preheat the over to 350*F.  Coat a 6-cup nonstick muffin pan with cooking spray or line with paper baking cups.  In a medium nonstick skillet over medium-high heat, cook the sausage, pepper, and onion for 5 minutes (spray with a little I Can't Believe It's Not Butter or Pam) and add mushrooms for another minute or so.  Spoon mixture into bowl and cool slightly.  Stir in the eggs and transfer to muffin cups.  Sprinkle with cheese (you could also put cheese into the egg mixture).  Bake for approximately 20 minutes, or until the egg is set.

  Very good!  Might want to double or triple the recipe though, it does not make much.
