carb-less peanut butter cookies

1 CUP PEANUT BUTTER 1
CUP
SPLENDA 3
EGG WHITES
1/4 TEASPOON BAKING
SODA 1/4 TEASPOON
SALT 1/2 TEASPOON
VANILLA
EXTRACT HANDFUL
OF FLOUR
Preheat oven to 350*. Mix all
ingredients in medium sized bowl until thick and
batter-like. I like to open the bag of flour and throw
in a decent handful (or else the cookies will not
be cookies). Transfer to greased baking sheet and
bake for 10-12 minutes.
O ne serving,
1/4 cup of flour, is 21g of carbs. In this recipe, I used
roughly 1/8 cup for 14 cookies, which will last me 7 days (2 cookies per
day) and the equivalent of 1.9g of carbs from flour per day. The
peanut butter's carb count is 5g per 2 tablespoons, and this recipe calls for 16tbsp, equaling 40g carbs (24g sugar). That means each cookie has a total of 3.7
grams of carbohydrate & 1.7g of that from sugar.
